Our Food

Respect for the ocean begins with what we serve.

Our Philosophy

Great sushi depends on a healthy ocean.

Seafood is central to Japanese cuisine, but the ocean is not an unlimited resource. Our goal is to build a menu that respects the ingredients, the people who harvest them, and the ecosystems that make them possible.

That means asking better questions about origin, seasonality, harvesting methods, transportation, and waste. We see responsible sourcing as an ongoing discipline—not a one-time statement.

Protecting What Sustains Us

A responsibility that continues to evolve.

Responsible seafood programs require continued review. Species availability, fisheries, regulations, and supplier practices change over time, and our standards should evolve with them.

As SORA grows, we intend to document our sourcing standards, strengthen supplier transparency, and identify practical ways our restaurant can support healthier oceans.
